Fiber Filled Pumpkin Spiced Latte
I know, I know…. you’re probably thinking, “Fiber in a drink?! She’s gone too far!” But just for a moment, hear me out…
Drinks are a great and sneaky way to sneak some fiber into your diet, whether it be the milk you’re drinking, a smoothie you have, or adding a psyllium husk powder to your coffee — fiber can be easily added into your drinks, and this is the perfect example of that. Since we all need a bit more fiber in our diets, this is a way to do so without using beans or whole grains like you would in a savory dish.
So for this recipe, I took a traditional pumpkin spice latte recipe (and I used to co-own a coffee shop, so you can trust that I know how to make one! 😉) and made it lower sugar than the traditional Starbucks drink, while also adding a touch of fiber. This fiber will help keep your digestion more regular, but also your blood sugar levels, as well as keep you fuller longer. Okay, so let’s get to the recipe. It’s so easy to make, but you’ll need a blender, measuring utensils, and a sauce pan (or a steamer to heat up milk if you have an espresso machine). This recipes makes TWO lattes, which I purposefully did so you can enjoy with a friend (the best way to spend fall!). If you want to just make this for you and your cozy fall Saturday at home with a little Gilmore Girls, simply half the ingredients.
It’s one you’ll want to make on repeat at home once you get it down. Pumpkin spice, but make it fiber! Add it to your routine and I promise you’ll feel a difference in your overall gut health.

Makes: 2 10 ounce servings
Equipment needed: blender, sauce pan, measuring utensils (candle and pumpkins to set the vibes, but not necessary!)
Ingredients:
2 tbsps organic pumpkin
4 shots of espresso (or 3/4-1 cup of brewed coffee, although it wouldn’t taste as much like a latte, it’s still a great alternative)
2 tablespoons organic honey (This is the brand that I have been loving)
1 1/2 teaspoons cinnamon
½ teaspoon pumpkin spice
1 teaspoon vanilla extract
½ tablespoon ground flaxseed
2 cups + 1 small splash of unsweetened flax or almond milk (or milk of choice, just be mindful of sugar! The flax milk is earthier, but man does it add more fiber!).
Sea salt
Recipe:
Add pumpkin, espresso, 1 tbsp honey, 1 teaspoon cinnamon, pumpkin spice, vanilla, ground flaxseed, and a splash of almond milk into a high powered blender. Blend on med-high until smooth, about 1-2 mins.
In a small saucepan, bring 2 cups of almond milk to medium to high heat, not boiling. Stir continuously, then add in ½ tsp cinnamon, 1 more tablespoon of honey (omit if you don’t want it sweet at all) and a pinch of sea salt. Stir for 4-5 minutes or until cinnamon, honey, and salt are combined.
Place two 10-ounce coffee mugs onto the counter — evenly divide the blended pumpkin spice mixture into the mugs, which should be about 2 ounces each. Then, evenly divide the milk into each mug. Pouring out of a saucepan can be tricky, so be mindful and you mind want to do it over a sink or pour in a cup first!
Top with cinnamon if desired, then enjoy a fiber filled, healthy and nutritious pumpkin spice latte with a friend this fall. 🖤
